Curry Chicken Recipe 🇯🇲 Ingredients For the marinade: • 1kg chicken thigh (skin removed) • 2 tbsp Betapac curry powder • 1 tbsp regular curry powder • 2 tsp all-purpose seasoning • 1 tsp black pepper • 1 tsp salt • 8 pimento seeds • 2 garlic cloves, chopped • 1½ tsp chopped ginger • ½ scotch bonnet, chopped (no seeds) • 1 tbsp green seasoning For cooking: • A few stems of dried thyme • 8 pimento seeds • 400–500ml hot water • 1 medium carrot, chopped • 2 medium potatoes, chopped • (Optional) 10
